You can identify the Spring Lamb with its lighter colour and delicate flavour opposed to the Hogget & Mutton with are both darker colour and have a more robust flavour.

Basic Cooking Guide
Best cooked on a barbecue for a smoky and earthy flavour, otherwise, use a preheated griddle pan.
Slap the cutlets with the heel of your hand to flatten slightly then bash up some thyme in a pestle and mortar and add a little olive oil.
Rub the marinade on the cutlets and griddle for 3-4 minutes each side (based on 1.5cm thickness).
